Landon Bear is Falling Down...Falling Down...
Last night we went in search of a dining table. We have been looking for one for about a year, but could never decide, or agree on exactly what we wanted. With the upcoming garage sale looming, I have put just a little pressure on my dear husband to buy us a new table so that we can sell the very old, gross one sitting in our dining room. So...we went to a few stores last night and ended up at one we have been to a few times before. The good news is that we found two wonderful options and now just have to decide which one we want...the bad news is that in the hour we spent there, Landon probably fell down ten different times (no exaggeration), fell off a chair, and knocked over a lamp. I believe that it was a combination of having new shoes on (which are a little bit big on him) and the store having new carpet, but seriously every three minutes the kid would take a spill...as in...he would really bite it! The lady must have wondered what in the world was wrong with him, but by the fifth or sixth time it was just comical. In real life, he rarely falls, and certainly NEVER falls out of a chair...but last night he just could not seem to stay upright. Every time he would fall (except for when he fell out of the chair) he would just start laughing or say,"What is wrong me with me!" Even the lamp falling over was an act of clumsiness, not disobedience...he tripped and over the lamp went. Needless to say, his knees are a bit rug burned and skinned in a few places...good thing he is a tough kid. Although, on the way home he was saying, "It hurts really bad!" By then though, it was a combination of being tired, and seeing a single dot of blood on his knee, which for a kid signals death and dying ![]() Per many of your requests here is the burrito recipe from Faithchick. We had them last night and they were indeed DELICIOUS and VERY easy! Thanks so much for sharing Faithchick!!!
1 lb. of beef 1 green pepper 1 onion garlic about 1 t. minced shredded cheese
10" (maybe 12") tortillas taco seasoning packet
Brown meat in pan along with garlic, onion & Peppers. Add seasoning packet. Scoop some meat into a tortilla shell, sprinkle with cheese, fold up wrap in foil. Repeat til meat is gone. Warm in oven about 15-20 minutes (to melt cheese & warm the tortilla) Top with tomatoes, green onions, sour cream...whatever ingredients you want. (usually, I only have sour cream around, b/c this is usually an "oh my goodness, it's time to make dinner, I need something fast." meal. ;) you can probably add more veggies to the meat or take away the ones you don't like. :) I've made them with and without garlic and I don't notice much of a difference. They freeze really well, too.
I've made a double batch & frozen several for quick meals. Just do the same as above and instead of baking them in the oven, stick them in the freezer. When you want them, take them out & bake them as above.
